good questions
There is just a small amount of methyl in most booze. When you make a distilled spirit it concentrates it and thus makes it toxic. Even if you take the entire run metyl, ethyl and fusel oils combined in most cases there will not be enough methyl to cause issues. Just when you know there is poison in there and you know how to remove it, ya might as well.
How the hell they figured out the process in the first place I have no clue, but the guy (or gal) was a genius!

I understood that the methyl was additive: after a certain concentration you go blind. I understood that it accumulates in the brain. After a certain concentration is reached, BLINGO! No more lookin at beauty...

they can remove that adams apple for ya, I knew a gal who had PCOS from a very young age and she developed an adams apple and a plastic surgeon fix'd it for her.
