Puck phoned this evening, he is coming on Saturday, wants Jumbalaya for dinner, good for him! We make ours with chopped tomato plus pulses, chicken, bacon, onions & sausage. I had a go at the Humus with chilli. Could not get Jalapenos, used a small red chilli, halved & deseeded, finely chopped, to four dessert spoons Humus. I have to say, in all my years, that I haven't eaten Humus before, but the mixture is very agreeable!

Goes great with lightly olive-oiled (xxxtra virgin, oh YEAH) and heated pita bread.

Now I'm a bit ashamed - since we might have to meet for our games tomorrow instead of saturday, I suggested something fast and totally crass for dinner - Lips and A-holes. (i.e. hotdogs).

Well, its not for a game session, but this is what I'm making for dinner tonight.

Fried Spinach Parmesan

  • 1 egg
  • 2 cups torn baby spinach leaves (stems off!)
  • 1 1/2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon ground nutmeg
In a bowl combine the Parmesan cheese, onion powder, and nutmeg. Add one egg to the mixture and stir well.
Mix the torn spinach leaves into egg mixture; folding the pieces into the egg until all pieces are covered. It's the glue that sticks the pieces together and coats the Parmesan on as light batter.
In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3- 4 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

joec - kind of a vegetarian omelet of sorts?? I'm not a great big egg fan, but I'd try that...sounds pretty good.

And man...ken...talking about jumbalya, I haven't had some of that in ages...been wanting to make som. Just haven't
gotten around to it. I really want some now. uhg.

Pretty much. but where an omelette is mostly egg, this mixture is using the egg to bind the spinach leaves together, and they're the primary ingredient. And for the record: they were delicious. When I sprinkled a bit of parmeasan on top, it added a bit more.

my wife and I just had her parents over for dinner last night - grilled pizza. Anyone ever tried that...works really well, and its easy.
Get the grill warmed up and clean. Turn all the knobs to low, and spray the grate.
Take any uncooked pizza crust (store-bought, homemade, whatever) - brush olive oil over both sides.
Put the crust on the grill and close the top. Check it often, and when it starts to get crispy, turn over.
Put your toppings on - sauce, cheese, anything else. Close the top.
Check often to make sure the flip side doesn't burn. You may need to put in the oven on 325F for a bit to finish melting the cheese.
BUT...it should work in the grill all the way, for the most part.
If your pizza is small enough, and your grill has the upper grate for veggies and stuff...you can move it to that grate to finish
melting the cheese.

If anyone is interested...I can post the crust recipe we used last night. Included some herbs to make it even tastier.
