I've also discovered that trying to do NMM is hard! I gave it a shot, and ended up still slapping some silver on the edges after it came out looking not so great.

Dude, you painted eyes! I doubt I'm ever gonna be able to do that. And I'd say the goblin looks nicely shaded. You managed to paint basically within the lines (I dunno, did that take a lot of effort?), you managed to have all the details show through… Nice job, I'd say.

If you're worrying about NMM, it sounds like you've made the mistake of watching pro-level painters on YouTube do stuff like wet blending, NMM, and other professional techniques. I watch a few of those guys myself—they're amazing! But they're also people who either do it for a living, or are so heavily invested into the craft that they might as well do it for a living.
You might watch them to see if you can learn how they do a technique here or there (I wouldn't start with NMM if I were you, but if you wanna go there … go there!) but I wouldn't get hung up on not being able to do it the way they do. What I might do is see someone whose minis have excellent metals and hear them say that they've sworn off Citadel metallics. What do they use instead? I will try to pay attention. And how did they paint that axe? They applied it then a little black wash, a few specks of brown wash, and then went back with silver at the very edge and a few short streaks inward with a very sharp brush tip? Okay, I can try that.
If I can do that, I'll have added detail to a weapon that didn't really need it, but looks cool for having it.
